Honestly Healthy Chocolate Chip Cookies

My friend Heidi came over the day with some of these deli­cious cook­ies. She and her daugh­ter Maude (Esme's BFF) had made them together. Heidi said it was a really easy recipe to do with a kid as there are so few steps. We had a cou­ple with cof­fee and the remain­ing three were meant for my hus­band Ben and Esme to have. Um, yeah, that didn't hap­pen.

So. Tomor­row Heidi and her daugh­ter Maude are com­ing over and we're going to the park for a pic­nic lunch. Esme and I made another batch this after­noon to take on our pic­nic. Heidi was right — it was super easy. The only tricky part was get­ting Esme to stop eat­ing the dough. I couldn't blame her, though, it was amazing.

It's a very stan­dard cookie recipe but it's made extra fab­u­lous and quite a bit health­ier by the addi­tion of a cup of Muesli by Bob's Red Mill. Do you know that line? Very good organic flours, oats, wheat germs, etc. You could eas­ily sub­sti­tute another Muesli or granola.

Hon­estly Healthy Choco­late Chip Cookies

3/4 cup whole­wheat flour
1/2 tsp. bak­ing soda
1/2 tsp. salt
1/2 cup but­ter
3/4 cup brown sugar
1/2 tsp vanilla
1 egg
1 cup muesli
1 pack­age of choco­late chips

Method

Pre­heat the oven to 375 degrees.

Sift together flour, bak­ing soda, salt in a bowl.

Cream together soft­ened but­ter, vanilla and sugar until light. Add egg and blend again.

Add the flour to the but­ter mix­ture and mix well. Stir in muesli and choco­late chips. Drop bat­ter onto cookie sheets with a tea­spoon and bake for 10 to 12 minutes.
