My friend Heidi came over the day with some of these delicious cookies. She and her daughter Maude (Esme's BFF) had made them together. Heidi said it was a really easy recipe to do with a kid as there are so few steps. We had a couple with coffee and the remaining three were meant for my husband Ben and Esme to have. Um, yeah, that didn't happen.
So. Tomorrow Heidi and her daughter Maude are coming over and we're going to the park for a picnic lunch. Esme and I made another batch this afternoon to take on our picnic. Heidi was right — it was super easy. The only tricky part was getting Esme to stop eating the dough. I couldn't blame her, though, it was amazing.
It's a very standard cookie recipe but it's made extra fabulous and quite a bit healthier by the addition of a cup of Muesli by Bob's Red Mill. Do you know that line? Very good organic flours, oats, wheat germs, etc. You could easily substitute another Muesli or granola.
Healthy Chocolate Chip Cookies
3/4 cup wholewheat flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butter
3/4 cup brown sugar
1/2 tsp vanilla
1 cup muesli
1 package of chocolate chips
Preheat the oven to 375 degrees.
Sift together flour, baking soda, salt in a bowl.
Cream together softened butter, vanilla and sugar until light. Add egg and blend again.
Add the flour to the butter mixture and mix well. Stir in muesli and chocolate chips. Drop batter onto cookie sheets with a teaspoon and bake for 10 to 12 minutes.
