When I was growing up my mom (Hi Mommy!) would make me Applewiches. The apple and peanut butter snack was one of my favorites. I was rarely allowed any sweets or chips unless my older brother slipped them to me. Unfortunately, because I was the much younger sister, those snacks, disquised as benovolent offerings, were really pratical jokes laced with a excessive salt or worse. One afternoon when Scarlett was asking me what it was like when I was “little”, I remembered the apple treat. So we decided to make them with a few extra bells and whistles.
1 organic apple (Macintosh or other depending on your liking)
1 tablespoon peanut butter or almond butter
1 teaspoon sunflower seeds
1 teaspoon chocolate chips
1 lemon wedge
Thoroughly wash apple. Slice apple lengthwise and core.
Squeeze juice of lemon on apple if you plan on storing it for a later snack to keep it from browning. You can skip this step if you plan to eat the sandwich right away.
Spread with peanut or apple butter. Finally, sprinkle apple with chips and seeds.
Scarlett showered her apple with lemon juice since we planned to pack it in our lunch sac for a snack after our swim.
We used almond butter, but I find that any of the nut butters are a tasty pairing. (What do you think of Scarlett’s new apron? We found it at Preloved….it’s made from old bed sheets. It has a cabbage patch doll pattern. She had no clue what they were she just liked that it was pink.)
Scarlett ate and sprinkled equal parts of sunflower seeds and mini-chocolate chips on her apple. Feel free to sub in other favorites like granola, cranberries, raisins or other seeds because any way you slice it, this snack is easy, yummy and healthy.
