Pasta Week: Kale Pasta - Sweet Potato Chronicles

Pasta Week: Kale Pasta

Some times Scarlett and I come home from our day and drag ourselves through the front door. She lays on the hall floor, barely able to remove her shoes. I, on the other hand, ask her to please hang her coat and put her shoes away. In reality, I want to lay on the floor with her. Then, there are the other times. The times we come through the door enthusiasically, still chatting away about the day's events. On one particular evening like this, we decided we'd put pasta on our dinner menu. A bold move for us to stray from our planned meal and just wing the evening's menu. I turned up this recipe from Whole Foods and we immediately went to work.

Kale Pasta

1/4 cup of olive oil
1 red onion, chopped
1 red bell pepper, cored, seeded and chopped
1 bay leaf
1 tablespoon fresh thyme, chopped
1 pound whole wheat penne pasta
1 bunch kale, tough stalks trimmed, chopped
3 cloves garlic, minced
1/2 cup vegetable stock
1/2 cup of goat cheese

Method

Heat 3 tablespoons olive oil in a heavy pot. Add onion, red pepepr, bay leaf and thyme and cook for 5 minutes or until onions slightly brown.

In another pot, cook pasta. Drain and reserve it in  a serving bowl.

Add the kale and garlic to the onion mixture an dsaute for 5 minutes, add the stock and simmer another 2 minutes.

Stir the kale mixture into the pasta with remaining olive oil and pepper. Toss to mix. SPrinkle goat cheese over top.

Scarlett pulled all the course stalks off the kale as I chopped the onion and red pepper. Now that Scarlett has gotten bigger as well as more comfortable in the kitchen and completely sensitive to its dangers, I allow her to take part in the cooking process. She wears these big, red plastic oven mits to stir. She's a bit clumsy, but strangley proficient. This meal came together quickly, and since it's full of kale and red pepper itwas a nutritional win.

On this evening, it was only the two of us dining so we had plenty of  leftovers. However, I'm not sure how. Scarlett and I each had two helpings. Afterwards, I think we had to lay on the floor for a bit  from being so full. I sometimes just can't resist.
