Pasta Week: Kale Pasta

Some times Scar­lett and I come home from our day and drag our­selves through the front door. She lays on the hall floor, barely able to remove her shoes. I, on the other hand, ask her to please hang her coat and put her shoes away. In real­ity, I want to lay on the floor with her. Then, there are the other times. The times we come through the door enthu­si­a­si­cally, still chat­ting away about the day's events. On one par­tic­u­lar evening like this, we decided we'd put pasta on our din­ner menu. A bold move for us to stray from our planned meal and just wing the evening's menu. I turned up this recipe from Whole Foods and we imme­di­ately went to work.

Kale Pasta

1/4 cup of olive oil
1 red onion, chopped
1 red bell pep­per, cored, seeded and chopped
1 bay leaf
1 table­spoon fresh thyme, chopped
1 pound whole wheat penne pasta
1 bunch kale, tough stalks trimmed, chopped
3 cloves gar­lic, minced
1/2 cup veg­etable stock
1/2 cup of goat cheese


Heat 3 table­spoons olive oil in a heavy pot. Add onion, red pepepr, bay leaf and thyme and cook for 5 min­utes or until onions slightly brown.

In another pot, cook pasta. Drain and reserve it in  a serv­ing bowl.

Add the kale and gar­lic to the onion mix­ture an dsaute for 5 min­utes, add the stock and sim­mer another 2 minutes.

Stir the kale mix­ture into the pasta with remain­ing olive oil and pep­per. Toss to mix. SPrinkle goat cheese over top.

Scar­lett pulled all the course stalks off the kale as I chopped the onion and red pep­per. Now that Scar­lett has got­ten big­ger as well as more com­fort­able in the kitchen and com­pletely sen­si­tive to its dan­gers, I allow her to take part in the cook­ing process. She wears these big, red plas­tic oven mits to stir. She's a bit clumsy, but stran­g­ley pro­fi­cient. This meal came together quickly, and since it's full of kale and red pep­per itwas a nutri­tional win.

On this evening, it was only the two of us din­ing so we had plenty of  left­overs. How­ever, I'm not sure how. Scar­lett and I each had two help­ings. Afterwards, I think we had to lay on the floor for a bit  from being so full. I some­times just can't resist.
