Here we are in week two of my new lunch-packing career…. and doesn’t it feel more like two years to you? I’m already feeling my system falling apart a bit. I’ve been batch cooking on the weekends to get ahead either on things I can pack in lunches or easy dinners for the week and it’s been a huge help. I’m still getting a sense of what kinds of groceries I’ve got to have to make it through the week. Tomorrow’s lunch just isn’t the piece of art that Monday’s was as I’m running low on a few key items. Hopefully this weekend’s grocery shop will be a bit more precise. These PC Blue Menu Whole Wheat Tortillas will definitely be on my list. Esme is a big fan of what she’s always called “rollie sandwiches.” Meaning anything in a wrap. I like them, too. They stay together in a lunch box better than traditional sandwiches and I can load them up with lots of healthy ingredients. I like that they have a nice amount of protein in them as well. We also use them for quesadillas for super quick dinners. Hmmm… leftover quesadillas for lunch?

I totally understand your frustration with packing lunches – it can seem like a real chore sometimes and it does not seem to get any easier as the years go by, sorry to say!
